Seafood is abundant and central to Chilean cuisine, with dishes like ceviche (fresh fish marinated in lime juice), mariscal (a raw seafood medley), and congrio frito (fried conger eel) highlighting the country’s love for ocean delicacies. Empanadas are a beloved staple, often filled with beef, onions, olives, and hard-boiled eggs, known as empanadas de pino. Corn-based dishes like pastel de choclo, a comforting casserole layered with ground meat, olives, and a sweet corn topping, are also popular. Chileans have a passion for bread, and varieties like hallulla and marraqueta are served daily. Local wines, especially from the Central Valley, pair excellently with meals, while pisco – a grape-based spirit – is enjoyed in the famous pisco sour.
